PERFECT VEGAN BANANA BREAD

Ever since I mentioned my own banana bread recipe to you guys in one of ‘what i eat in a day’ videos over on my youtube channel, my inbox, comment section and so on got wild with requests to share it with the world. So today’s the day. This is literally the easiest thing you can bake, with an amazing taste and scent, wonderful for both colder days as well as warmer ones. To eat on it’s own or with a dash of your favourite jam, any sort of chocolate spread or anything really. And if you somehow never had an opportunity to try banana bread, make sure to get your ingredients asap and use my recipe as your guide! Ahh I just am a banana-bread-aholic myself so excuse my excitement. Let’s move onto the recipe. 

I N G R I D I E N T S

4 ripe medium bananas

1 and 1/2 cups of organic all purpose flour (i believe you can use whole-grain as well)

1/3 cup plant-based milk (i like the oat milk)

1/3 cup rolled oats

1/3 cup of brown sugar

1/3 cup coconut oil, melted

1 teaspoon baking soda

1/2 teaspoon baking powder

2 teaspoons pure vanilla extract / pure vanilla sugar

a pinch of nutmeg, cinnamon and salt

O P T I O N A L:

2 tablespoons pure maple syrup to make the bread more moist

sliced banana to put on top and/or chocolate chips

chopped walnuts or another nuts of choice

I N S T R U C T I O N S

1. preheat the oven to 180 celsius degrees, line your bread pans with parchment paper, if you want to add nuts later on - chop them into smaller pieces

2. in medium sized bowl mix all of your dry ingredients together (except for sugar) and set aside

3. in a separate bowl mash your bananas, leaving small chunks, then add sugar and oil, mix until they are all evenly combined

4. add the rest of wet ingredients to the second bowl

5. gently fold in the dry ingredients, just enough for everything to come together (that’s also the moment to add your nuts etc)

6. pour the batter into your pan

7. bake at 180 celsius degrees for around 30-40 minutes, then take the test with a toothpick for doneness (it should come out clean). If it’s not - bake for extra 5 minutes, controlling the bread until done 

8. eat your bread

*if you feel like your cake is too dry - add a little bit more of milk, 

if it seems to be too wet - add more rolled oats or flour
